No-Bake Almond Butter & Oat Protein Bars

Ingredients:

  • 1/2 cup coconut milk
  • 3 scoops Vanilla Whey or Vegan
  • 2 cups oats
  • 1 cup almond butter
  • 1/4 cup melted dark chocolate

Method:

Whisk coconut milk to thicken, then whisk in protein powder until combined.
Stir in almond butter until the mixture is smooth and creamy, then pour in oats and use your hands to mix everything together.
Tip the mixture into a square tray lined with baking paper and flatten the top with your hands so everything is evenly spread out.
Drizzle the melted chocolate over the top and place the tray in the fridge or freezer for at least 2 hours, ideally overnight.
Once set, remove and cut into bars. Keep in an airtight container in the fridge or freezer and enjoy!
