Protein Breakfast Bars

Ingredients:

  • 50g rolled oats

  • 50g puffed rice

  • 2 sachets Vegan Vanilla Multitasker

  • 50g unsweetened desiccated coconut

  • 3 tablespoons chia seeds

  • 1 teaspoon cinnamon

  • 50g dried blueberries

  • 3 tablespoons coconut oil or butter

  • 1 tablespoon nut butter

  • 4 tablespoons maple syrup or agave nectar

  • 2 eggs, beaten

  • 1 teaspoon vanilla extract


Method:

  1. Preheat the oven to 180 degrees C and grease and line a 9x9in baking tin.

  2. Mix together the oats, puffed rice, protein powder, coconut, chia seeds, cinnamon and blueberries in a bowl.

  3. Gently melt the coconut oil/butter, nut butter and maple syrup then leave to cool slightly.

  4. Pour into the dry ingredients along with the eggs and vanilla and stir to combine.

  5. Spoon into your prepared tin and smooth out evenly. Bake for 25-30 minutes until golden and firmed up - it will continue to while it’s cooling.

  6. Leave in the tin to cool completely then cut into 9-12 bars and enjoy!
