Vanilla & Blueberry Gluten Free Waffles

This recipe featured in our recent eCookBook, and it's such a winner we thought we'd also share it with you here. With Mother's Day coming up, what better way than to show her some love than with a waffle fuelled breakfast?

Ingredients:

  • 3 tablespoons Coconut Collaborative vanilla yogurt
  • 3 eggs
  • 2 tablespoons honey or maple syrup
  • 1/4 cup milk of choice
  • 1 X Vanilla Multitasker
  • 1/4 cup plus 2 tablespoons coconut flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/4 cup blueberries

Method:

Add all the ingredients, except blueberries, to a blender and blend until fully combined.

Spoon the mixture into a preheated waffle iron, dot with blueberries, and cook for about 3 minutes, or until cooked through.

Serve with any desired toppings and a drizzle of maple syrup.
